Our base ciders are available in 12 oz bottles. We create a wide range of seasonal ciders starting with Wet Hopped Summer Cider and Cidre Nouveau released in November, Winter Spruce tip, Spring Bulmers Irish and multiple fruit blends, including: strawberry, rhubarb, raspberry, apricot, plum, tart cherry and others. Since we are not using commercial juice concentrate, we blend and taste and blend again. We have four main ciders available year-round with a range of taste profiles.

Our special releases are available in 750ml bottles. They include, but are not limited to: Three-year aged, Golden Russet, Barrel aged Juliet and other varietals.

Base Ciders

Cool Haralson
(Fully-Dry)

Haralson is one of Minnesota’s oldest apple varieties. We press late harvest full-flavored Haralson and let it cold ferment slowly over winter. This cider is fermented completely dry giving it the tanginess of the Haralson apple without sourness. Our wild yeast creates a lemony overtone. This batch is unfiltered with a little yeast in the bottle leaving it hazy like German wheat beer. It has a very crisp and clean finish.

Late Minnesota Brut
(Fully-Dry)

This cider is a blend of our favorite late harvest apples. Great old varieties from the University of Minnesota create the base for this cider and provide rich aroma, high sugar and sharpness. European bittersweet apples from our cider orchards are then blended in to add tannins and layers of complex flavors. This is a light, local version of a traditional bitter British-style cider.

Honey Honey
(Semi-Sweet)

Honeycrisp apples create a light bodied sweet/tart juice base for this popular cider. We ferment the cider dry and then add some fresh apple juice and honey to provide a touch of sweetness in the finish. This is a crisp, clean and easy drinking cider.

Purple Reign
(Semi-Sweet)

This cider is made with Purple Royalty raspberries and apples. Purple raspberries have a flavor profile distinctly different from red and black raspberries. They provide a mellow sweetness that is not as tart as red or black raspberries. This is A semi sweet cider in honor of our favorite Minnesota Musician.

Hopped Haralson
(Semi-Dry)

Honeycrisp and Red Delicious apples create a perfect balance of flavor for this release. A touch of local honey compliments the flavors. This cider was fermented dry so only the honey provides the slightest touch of sweetness in the finish. This is a crisp, clean and easy drinking cider.

Keepsake
(Fully-Dry)

Keepsake is a late season dessert apple from the University of Minnesota.  It is known for its rich nutty flavor and storage ability.  We blended Keepsake with a little Bulmer’s Northern (a bitter sweet heirloom cider apple).  We fermented the blend with Mastervin Organic yeast then let it age over winter.  The result is a rich fragrant varietal cider with a touch of tannin for complexity.  This is our cider maker’s 2017 favorite.

Honeygold
(Fully-Dry)

Honeygold is a late season dessert apple from the University of Minnesota.  It is known for its delicate flavor and its balance between sweet and tart.  We blended Honeygold with a little Frequin Rouge (a French bitter sweet cider apple known for its fragrance).  We fermented the blend with Cote des Blancs yeast and let it age over winter.  The result is an amazingly floral varietal cider with a robust tannic finish.

Fireside
(Fully-Dry)

Fireside is one of Minnesota’s oldest varieties and is known for its sweetness and rich aromatic flavor.  We blended high tannin Bulmer’s Northern with the Fireside juice and allowed it to ferment and age all winter.  It even spent some time in an old wine barrel.  The extra tannin from the Bulmer’s Northern adds a little complexity to the flavor and stabilizes the cider.  This is a dry cider made with a Minnesota favorite in an old world style.

Seasonal Ciders

Cidre Nouveau
(Fully-Dry)

A British style hard cider made with traditional bittersweet cider varieties and fermented by wild yeast. We blended Bulmer’s Norman, Ellis Bitter, and Nehou European varieties with Sansa and a few other early sweet aromatic apples. This is a dry cider made in the traditional old world style. The bittersweet cider apples give you a hint of European cider. This is a young cider with old world apples giving a nice combination to ring in the new cider season.

Wet Hopped

Unlike most hopped ciders, we do not use pelleted hops. We hand harvest fresh hop cones in September and ferment them with juice from our early apple varieties. This creates an amazingly floral cider with a little extra bitterness. This is a semi-dry cider with a complex flavor profile.

Strawberry Rhubarb

Experience the classic combination of Strawberry and Rhubarb in this semi-dry cider. The distinct rhubarb flavor comes through without the intense sourness. Adding just the right blend of strawberries creates a sharp and crisp, refreshing cider. Your first sip starts with the fragrance of strawberry, followed by the tang of the rhubarb and a light berry/apple finish.

Kiss My Razz

Kiss My Razz starts with a Honeycrisp base cider. We then add estate grown fermented red raspberry juice. This cider has a subtle raspberry nose with a smooth finish.

Aprihopped

Our Aprihopped hard cider starts with a base of apple and apricot juice.  We then add a hop tea brewed from Golding hops to add aromatics and amazing floral hop flavors.  Do you like apricots?  Do you like hops?  Then you will love when they come together to make a combination like no other!

Sweet Cherry Pie
(Semi-Sweet)

Sweet Cherry Pie starts with a blend of several apple varieties to create a rich and tart base cider.  We then add our estate grown organic cherry juice made from Hungarian pie cherries.  This leaves the cider with a very different flavor profile than black cherry cherry juice concentrate used in most cherry ciders.  This semi-sweet treat starts off with a smooth apple front and ends with an amazing cherry pie finish.

Special Releases

Three-Year Barrel Aged
(fully-Dry Oaked)

A combination of our best flavored late season apple varieties. A few months in an old wine barrel creates just the right amount of oak to produce hints of vanilla and caramel. The extra years of aging allows a malolactic fermentation to soften the acids and provide a smooth butterscotch finish.

Golden Russet
(Fully-Dry Oaked)

Golden Russet is a true American heirloom apple variety. It has the profile to make a great varietal hard cider. We aged this batch in a wine barrel to add tannins and the oak also gives off a hint of vanilla. One of our smallest batches yet so this is a very limited release.

Colorado Blue Spruce

Our Organic orchards are bordered with Colorado Blue Spruce trees.  We hand harvest the shoot tips in Spring.  We later ferment them with cider and blend the tea into our Honeycrisp cider.  This leaves it tart with some underlying citrus tones, a light spruce nose and bright finish.
